Meltdown on Main

Meltdown on Main is a specialty food truck in Pagosa Springs that serves up a multitude of different types of grilled cheese sandwiches. It’s easy to miss if you’re driving by or even on the other side of the street, but it is definitely a spot to check out.

Meltdown on Main is located on US 160 in central Pagosa Springs between the Antiques on Main and the Human Society Thrift Store. One of the reasons the truck is easy to miss is that it’s parked in an area that is below the road. This part of town is lined with shops, cafes, and restaurants and this can make it tough to spot with everything else around it. To get down to the truck, just take the ramp towards the antiques shop then turn right. The food truck has a nice amount of outdoor seating for its customers with picnic tables, chairs, and even a heater for when it’s cold outside. The spot with the truck and seating area is lower than street level, giving it a cozy, welcoming feel.

We had a hard time choosing from the menu - there were so many delicious-sounding options!

Taylor decided on The Mac, which includes their mac and cheese topped with green chilies and applewood-smoked bacon. The mac and cheese was ooey-gooey and overflowing from the nicely toasted bread. The thick-cut bacon was great, and the green chilies added some nice flavor that breaks through the cheese.

Michelle picked the Caprese, which was layered with thick slices of buffalo mozzarella cheese, roma tomatoes, and bits of fresh basil. It was drizzled with balsamic glaze on top, which was pretty messy, but delicious! This sandwich was especially good dipped in a side of their Smoked Tomato Dip’n Sauce, which was smokey, chunky, and really well-seasoned. We appreciated the fact that the sandwiches were really nicely toasted, but weren’t greasy at all. To go with our sandwiches, we shared a side of their waffle fries, which were crispy and salty.

It’s a shame we only had time to eat here once because we honestly wanted to try everything. We’d love to visit this cute food truck again to try some of their other menu options!
