Two Chicks and a Hippie

Before we ventured off on a snowy hike in the nearby mountains, we stopped by the bakery and restaurant called Two Chicks and a Hippie for some delicious brunch.
Two Chicks and a Hippie is located just off US Highway 160 in the west end of Pagosa Springs. Turn northwest at the intersection for Pagosa Boulevard, take the first left on Navajo Trail Drive, and it’s located on the west corner of the first small business strip. The corner is tucked away a little and we initially didn’t see it till we circled around a second time.
From the entrance you can go straight to the bakery for a takeout order or you can sit in their dining area. The dining area’s main wall is covered with a mural of the van from the restaurant’s logo. It’s bursting through the wall and adds a nice touch to the atmosphere of the place.
We started off our meals with some pastries from the bakery. Unfortunately, since we came later in the morning, the bakery was down to a limited selection. We ended up getting the apple cinnamon tart and the cinnamon cream cheese turnover. The apple cinnamon tart was flaky and filled with baked apples. The cinnamon cream cheese turnover was super flakey and filled with baked apples and cream cheese. Both were a great start to the meal.
Two Chicks and a Hippie also serves breakfast cocktails. As we walked in, the sign at the entrance had their daily specials and the drink was a S’mores White Russian. It sounded delicious, so we had to order one. The drink was sweet and creamy with chocolate and graham crackers on the rim so you got a taste with every sip.
For our entrees we got corned beef hash and the breakfast burrito. The corned beef hash came with a croissant, and Taylor ordered over easy eggs. The corned beef was super tender, nice and salty, and sitting on a bed of hash browns. The hash browns could have been crispier but it didn’t matter since the corned beef was so delicious. The breakfast burrito is massive. It came stuffed with fried eggs, potatoes, cheese, and crispy bacon, we got it smothered in the green chile sauce, which is thick and has a nice kick to it. It was great, but ended up being way too much for Michelle to eat on her own.
We liked this place so much that we stopped by here a second time just before we left town for the next leg of our trip. It’s a good thing we came back because we got there early and the bakery was still fully stocked.
The second time we were able to order what we really wanted from the bakery: the cinnamon roll and sticky bun. The cinnamon roll was a tasty roll filled with cinnamon and covered in a light glaze, but the real star ended up being the sticky bun. The sticky bun was still warm, covered in warm caramel, and nuts. It was extremely amazing.
For our second time here we got a breakfast sandwich and the gouda omelette. The breakfast sandwich has your choice of meat and bread; Michelle chose bacon and a croissant! The sandwich had hard fried eggs, pieces of crispy bacon, and cheese that were all between an extremely soft, buttery croissant. Taylor had the side of bread that came with the gouda omelette substituted for pancakes. The omelette was packed full of veggies, sausage, and with plenty of gouda cheese. Each bite started with the veggie mix and the salty sausage, but then the gouda flavor came in strong at the end. The pancakes were very light and fluffy.
Two Chicks and a Hippie has some amazing food. The fresh bakery items and breakfast cocktails make it a wonderful place to stop for some breakfast. It’s open pretty early, so it’s a perfect place to fill up before an adventure, long drive, or just a soak in the nearby hot springs.
